Chocolate Protein Cake (recipe adapted from Jamie Eason’s Chocolate Protein Bars)
- 1 cup oat flour (If you don’t have oat flour grind up quick oats in a food processor)
- 2 scoops chocolate protein powder (I used Pure Protein or Body Fortress)
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon espresso powder, optional (it brings out the chocolate flavor)
- 1 cup zero calorie sweetener (if using Stevia you might want to only use 1/2 cup)
- 4 large egg whites
- 1 teaspoon vanilla extract
- 1 cup unsweetened applesauce
- 1/2 cup water (or brewed coffee)
Preheat your oven to 350 degrees.
In a large bowl mix together the dry ingredients - oat flour, protein powder, cocoa powder, salt, baking soda, and espresso powder.
In a medium size bowl mix together wet ingredients - egg whites, applesauce, zero calorie sweetener, water/coffee, vanilla.
Add wet ingredients to dry ingredients and whisk together until combined.
Spray an 8x8 baking dish with non-stick butter or oil spray and add batter to pan.
Bake for 25-30 minutes or until a inserted toothpick comes out clean.
Let cool and cut into 16 pieces.
Nutritional Facts: (may vary depending on what protein powder you use) 1/16th serving is 61 calories, 8 grams carbs, 1 gram fat, 1 gram sugar, and 6 grams protein.
This cake is really good, and even good for you. I personally like it a little undercooked because it reminds me of really fudgy brownies that way. You can also try it with dark chocolate cocoa powder for extra chocolate flavor. I made this cake last night and have already eaten half the pan but I don’t really feel guilty about it because it’s so low calorie. Enjoy.
